Fruity Quinoa Salad

 

This may be one of the tastiest yet simplest salads I've ever had! I have had strawberries and oranges in a salad before but not blueberries with fish!! Everybody should try this - it's surprisingly moreish!

 

INGREDIENTS - serves 2

 

1 cup cooked quinoa

1 cup cherry, washed, pitted and cut in half

2/3 cup blueberries, washed

1 can tuna (in spring water if available)

2 cups raw kale

1/4 cup almonds, chopped

1/2 pack feta cheese

25g/2-3 tbsp tahini

Splash of white wine vinega

 

 

 

1. Mix the first six ingredients together in large bowl. 

2. Chop the feta into cubes and add to the bowl.

3. Mix the tahini with the white wine vinegar in a small bowl - this will create more of a sauce-like viscosity so the tahini can coat the salad. At this point you can add salt and pepper, cumin or even some cayenne pepper or paprika if you'd like a kick!

4. Pour the sauce over the salad and mix thoroughly using a large spoon.

 

 

Savour every mouthful!
