We really don't eat enough cold soups! They are fantasically refreshing and much easier to have when you're on the go as you don't have to heat it! The avocado gives the soup a creamy texture while the mint cleanses your palette - it serves as a great starter or a light, quick meal!

 

INGREDIENTS - Serves 4

 

1 ripe avocado, roughly chopped

1/2 cucumber, peeled and roughly chopped

300g frozen peas

20g pack of dill (reserve a few sprigs to decorate)

1/2 a pack of mint (pick off the leaves and leave some for decoration if desired - I didn't)

1 lemon, zested and juice of 1/2

1 tbsp extra virgin olive oil

A large pinch if smoked paprika, plus extra to serve

 

 

 

1. Pop all the ingredients in a blender with 600ml cold water and blend till smooth. Season with salt and pepper to taste and blend again until the consistency resembles thick cream.

2. Divide between four bowls, scatter with reserved dill, mint leaves if using, and a pinch of paprika.

3. Serve with spelt/wholegrain bread or eat it alone. :)
